What are the local dishes from Aruba? Are they famous for anything in particular in the way of food and/or drink? Spicy or mild? Rice or Potatoes or flatbread? Crazy fruits?

I've read that Aruba is famous for the foods sold on the simple push carts. They sell a large variety of Aruban delicacies. A friend told me about Roti which is a tortilla-like wrap that may be filled with chicken, seafood, or vegetable curry. She said they were delicious.

We really like the idea of being able to sample local cuisine from the small carts. That way we can try one item and if we don't like it we won't have to eat anymore. I assume that Aruba has health standards for these carts and that one wouldn't need to worry about getting sick from them.

They have some of the best seafood you will ever find. The shrimp is always huge and the calamari is very fresh. Calamari is the first thing I eat when I get there. Can't get anything like it here.
