I agree that the chefs in Aruba are used to lots of different dietary and medical needs and they are very willing to accommodate. I would suggest letting the resort that he will be staying at know in advance and see what they can do. And then, once he gets there, talk to the concierge and they can make him dinner reservations at the more flexible restaurants.
