I would recommend also to go on a sunset sail on a boat out of Oranjestad, (from Red Sail Sports). It goes from 5:30 pm to 7:30 pm daily. The sunsets out on the water are beutiful in Aruba.
I wish my company would do something like that for us. I don't really have any set sites that I am going to visit. I think some of the things you listed I may have to hit though because they sound interesting.
Congratulations. That's a great chance and I hope you are chose to get the reward. Yes I think it takes at least one week to explore the entire island. It's worth the time expenses though.
